- 2 tsp Italian seasoning
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese (or a blend with cheddar)
- 3 large eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
Instructions
- Preheat your oven to 375°F (190°C).
- Slice zucchinis into thin rounds and lay out on paper towels to absorb excess moisture.
- In a skillet over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant, then add ground meat. Cook until browned and crumbly.
- In a large bowl, combine cooked meat mixture with marinara sauce, eggs, Italian seasoning, salt, and pepper; mix well.
- Layer half of the zucchini slices in a greased baking dish, followed by half of the meat mixture and half of the cheese. Repeat layers with remaining ingredients.
- Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden brown.
