  • 3 medium zucchinis, sliced into rounds
  • 1 lb lean ground beef or turkey
  • 2 tsp Italian seasoning
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese (or a blend with cheddar)
  • 3 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis into thin rounds and lay out on paper towels to absorb excess moisture.
  3. In a skillet over medium heat, add olive oil and sauté onions until translucent. Add garlic and cook until fragrant, then add ground meat. Cook until browned and crumbly.
  4. In a large bowl, combine cooked meat mixture with marinara sauce, eggs, Italian seasoning, salt, and pepper; mix well.
  5. Layer half of the zucchini slices in a greased baking dish, followed by half of the meat mixture and half of the cheese. Repeat layers with remaining ingredients.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden brown.
