- 9 no-boil lasagna noodles
- 15 oz ricotta cheese
- 2 cups fresh mozzarella cheese, shredded
- 2 cups fresh spinach
- 1 medium zucchini, thinly sliced
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). If using traditional noodles, boil them until al dente.
- In a skillet, heat olive oil over medium heat. Sauté garlic, zucchini, mushrooms, and spinach until the veggies are tender.
- In a mixing bowl, combine ricotta cheese with half of the grated Parmesan, seasoning with salt and pepper.
- In a greased baking dish, layer marinara sauce, noodles, ricotta mixture, sautéed veggies, mozzarella cheese, and repeat layers until all ingredients are used.
- Cover with foil and bake for 25 minutes. Remove foil; top with remaining mozzarella and Parmesan. Bake uncovered for another 15-20 minutes until bubbly.
