- 1 lb lean ground turkey
- 1 cup fresh breadcrumbs
- 1/2 cup dried cranberries
- 1 medium onion, finely chopped
- 1/2 cup celery, finely chopped
- 2 tsp fresh thyme, chopped (or 1 tsp dried)
- 2 tsp fresh sage, chopped (or 1 tsp dried)
- 2 large eggs
- 1/4 cup low-sodium chicken broth
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and celery for about 4 minutes until soft.
- In a large bowl, combine the ground turkey, breadcrumbs, cranberries, sautéed onion and celery, thyme, sage, salt, and pepper. Mix well.
- Add the eggs and chicken broth to the mixture and mix until fully combined.
- Form small balls about the size of golf balls and place them on the prepared baking sheet.
- Bake for 25-30 minutes until golden brown and cooked through.
