  • 1 lb lean ground turkey
  • 1 cup fresh breadcrumbs
  • 1/2 cup dried cranberries
  • 1 medium onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 2 tsp fresh thyme, chopped (or 1 tsp dried)
  • 2 tsp fresh sage, chopped (or 1 tsp dried)
  • 2 large eggs
  • 1/4 cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Sauté the onion and celery for about 4 minutes until soft.
  3. In a large bowl, combine the ground turkey, breadcrumbs, cranberries, sautéed onion and celery, thyme, sage, salt, and pepper. Mix well.
  4. Add the eggs and chicken broth to the mixture and mix until fully combined.
  5. Form small balls about the size of golf balls and place them on the prepared baking sheet.
  6. Bake for 25-30 minutes until golden brown and cooked through.
