  • 2 medium zucchinis, diced
  • 2 bell peppers (any color), chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 cup canned whole tomatoes in juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables. Dice eggplant into cubes and sprinkle with salt; let sit for 10 minutes to draw out moisture.
  2. In a large skillet over medium heat, add olive oil. Sauté onions and garlic until translucent.
  3. Add drained eggplant to the skillet and cook for about 5-7 minutes until soft.
  4. Stir in zucchini and bell peppers; sauté for another 5 minutes until softened.
  5. Pour in canned tomatoes and add basil and thyme. Crush tomatoes gently while stirring. Simmer for about 20 minutes until thickened.
  6. Season with salt and pepper to taste before serving warm or at room temperature.
