  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, sliced thinly
  • 1 bell pepper, any color, chopped
  • 4 green onions, chopped finely
  • 8 oz lo mein noodles, cooked until al dente
  • 1/4 cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 2 cups chicken broth
  • 2 tbsp cornstarch mixed with water

Instructions

  1. Prepare all ingredients: chop chicken and rinse vegetables.
  2. Sauté garlic in a skillet over medium heat for about one minute; add carrots and bell peppers.
  3. Transfer to the crockpot with diced chicken and add soy sauce, sesame oil, and chicken broth. Stir well.
  4. Cook on low for 4-6 hours or high for 2-3 hours.
  5. About 30 minutes before serving, stir in cooked lo mein noodles mixed with cornstarch slurry to thicken the sauce.
  6. Garnish with green onions before serving.
