- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 medium carrots, sliced thinly
- 1 bell pepper, any color, chopped
- 4 green onions, chopped finely
- 8 oz lo mein noodles, cooked until al dente
- 1/4 cup low-sodium soy sauce
- 2 tsp sesame oil
- 2 cups chicken broth
- 2 tbsp cornstarch mixed with water
Instructions
- Prepare all ingredients: chop chicken and rinse vegetables.
- Sauté garlic in a skillet over medium heat for about one minute; add carrots and bell peppers.
- Transfer to the crockpot with diced chicken and add soy sauce, sesame oil, and chicken broth. Stir well.
- Cook on low for 4-6 hours or high for 2-3 hours.
- About 30 minutes before serving, stir in cooked lo mein noodles mixed with cornstarch slurry to thicken the sauce.
