  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup whole milk
  • 2 lbs russet potatoes, peeled and chopped
  • 2 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp paprika

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, and paprika.
  2. In a skillet over medium heat, add olive oil and sauté the chicken until golden brown on both sides (about 5-7 minutes each).
  3. Transfer browned chicken to a baking dish and bake for 20-25 minutes until cooked through.
  4. Meanwhile, boil potatoes in salted water until fork-tender (15-20 minutes). Drain and return to pot.
  5. Add butter and milk to potatoes; mash until smooth and creamy. Taste for seasoning.
  6. Slice chicken into bite-sized pieces and layer over mashed potatoes in bowls. Serve hot.
