  • 2 cups elbow macaroni
  • 1 lb lean ground beef
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1/2 cup diced pickles
  • 2 cups shredded iceberg lettuce
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup ketchup
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Cook macaroni in salted boiling water until al dente (about 8 minutes). Drain and rinse under cold water.
  2. In a skillet over medium heat, cook ground beef until browned (about 7 minutes), breaking it apart as it cooks.
  3. In a mixing bowl, whisk together mayonnaise, Dijon mustard, ketchup, onion powder, salt, and pepper until smooth.
  4. In a large bowl, combine cooled pasta, cooked beef, shredded lettuce, cheese, diced pickles, and dressing. Mix until well coated.
  5. Cover and chill for at least 30 minutes before serving.
