  • 2 cans (15 oz each) great northern or cannellini beans, rinsed
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 2 cups fresh spinach (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Stir in minced garlic for an additional minute.
  2. Pour in rinsed white beans and vegetable broth. Mix well and let the aroma fill your kitchen.
  3. Add fresh thyme, salt, and pepper to taste. Simmer gently for 10-15 minutes until heated through.
  4. For creaminess, blend part of the soup using an immersion blender or transfer half to a blender until smooth and return it to the pot.
  5. If using spinach, stir it in now and let it wilt for about 3-5 minutes before serving.
