Ingredients
Scale
- 2 cans (15 oz each) great northern or cannellini beans, rinsed
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 4 cups low-sodium vegetable broth
- 2 tablespoons extra virgin olive oil
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
- 2 cups fresh spinach (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until translucent, about 5 minutes. Stir in minced garlic for an additional minute.
- Pour in rinsed white beans and vegetable broth. Mix well and let the aroma fill your kitchen.
- Add fresh thyme, salt, and pepper to taste. Simmer gently for 10-15 minutes until heated through.
- For creaminess, blend part of the soup using an immersion blender or transfer half to a blender until smooth and return it to the pot.
- If using spinach, stir it in now and let it wilt for about 3-5 minutes before serving.
- Ladle soup into bowls and garnish with extra thyme or a drizzle of olive oil.
