Instructions

  1. Boil Potatoes: Peel and chop the Yukon Gold potatoes into equal pieces. Place in a pot of salted water and boil for 15-20 minutes until fork-tender.
  2. Drain & Steam Dry: Drain the potatoes in a colander and let sit for a few minutes to release steam.
  3. Add Butter & Cream: Return drained potatoes to the pot on low heat. Add butter and heavy cream; stir until melted.
  4. Mash: Use a potato masher or ricer to mash until smooth, being careful not to overwork the mixture.
  5. Season: Add salt, pepper, and roasted garlic if using; mix gently.
  6. Serve Warm: Transfer to a serving platter and top with extra butter or herbs if desired.
