- 1 lb lean ground beef
- 1/2 cup plain breadcrumbs
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1/2 cup heavy cream
- 2 carrots, diced
- 2 medium potatoes, diced
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large bowl, combine ground beef, breadcrumbs, onion, garlic, salt, and pepper. Roll into one-inch meatballs.
- Heat olive oil in a large pot over medium heat. Sear meatballs until browned (about 5 minutes). Remove and set aside.
- In the same pot, sauté chopped onions and diced carrots for about 4 minutes until softened.
- Add beef broth and bring to a simmer. Stir in diced potatoes and cook until fork-tender (10–15 minutes).
- Stir in heavy cream and add back the meatballs along with dill and parsley; cook for another 5 minutes.
- Serve hot garnished with additional parsley if desired.
