  • 8 oz rotini or penne pasta
  • 1 lb lean ground beef or turkey
  • 1 cup bell peppers (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup frozen corn
  • 2 tbsp taco seasoning
  • ½ cup ranch dressing
  • Juice of 1 lime
  • Fresh cilantro (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and set aside.
  2. In a skillet over medium heat, brown the ground meat for about 5-7 minutes.
  3. Add taco seasoning and ½ cup water to the meat; simmer for 3-4 minutes.
  4. In a large bowl, combine cooked pasta, seasoned meat, bell peppers, cherry tomatoes, black beans, and corn. Toss well.
  5. Whisk together ranch dressing and lime juice; pour over the salad mixture and mix until evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.
