  • 2 fresh salmon fillets (about 6 oz each)
  • 1 cup quinoa
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes

  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • 2 tbsp finely chopped fresh herbs (parsley or dill)

Instructions
