  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, diced
  • 2 medium potatoes, cubed
  • 4 cups low-sodium beef broth
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup heavy cream (or milk)
  • 3 tbsp ketchup
  • 1 tbsp mustard
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by dicing the onion, carrots, celery, and potatoes into even pieces.
  2. In a skillet over medium heat, brown the ground beef until cooked through; drain excess fat.
  3. Add diced onion and minced garlic to the skillet; sauté until onions are translucent (about 3 minutes).
  4. Transfer the beef mixture to your crockpot; add chopped vegetables, potatoes, broth, ketchup, mustard, garlic powder, paprika, salt, and pepper. Stir to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until veggies are tender.
  6. About 30 minutes before serving, stir in heavy cream and cheddar cheese until melted.
  7. Serve hot in bowls topped with additional cheese or fresh herbs as desired.
