  • 3 lbs beef short ribs
  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tbsp brown sugar
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 cups beef broth
  • 1 cup dry red wine

Instructions

  1. Preheat oven to 300°F (150°C). Season beef short ribs with salt and pepper.
  2. In a large Dutch oven, heat oil over medium-high heat. Sear short ribs until browned on all sides (about 3-4 minutes per side). Remove and set aside.
  3. In the same pot, sauté onions and garlic until soft (2-3 minutes). Add diced carrots and brown sugar; stir until combined.
  4. Deglaze with soy sauce and red wine, scraping any brown bits from the bottom of the pot.
  5. Return short ribs to the pot and add beef broth. Bring to a simmer; cover and transfer to the oven.
  6. Cook for 2½ to 3 hours until fork-tender. Allow resting before serving with sauce.
