  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 2 large sweet potatoes (about 1 lb), cubed
  • 2 tbsp Cajun seasoning
  • 3 tbsp olive oil
  • Juice of 1 lime
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat dry the chicken breasts and rub Cajun seasoning on both sides. Drizzle with olive oil.
  3. In a bowl, toss cubed sweet potatoes with olive oil, Cajun seasoning, salt, and pepper.
  4. Spread sweet potatoes on one side of a baking sheet and place chicken on the other side. Roast for 25-30 minutes until cooked through.
  5. Mix lime juice with extra Cajun seasoning in a small bowl for the sauce.
  6. Let chicken rest for 5 minutes before slicing. Serve by layering sweet potatoes and chicken slices in bowls; drizzle with zesty sauce and garnish with green onions.
