  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, chopped (mixed colors)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped cilantro

Instructions

  1. Prepare your ingredients by chopping onion and bell peppers and mincing garlic.
  2. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent (about 3-5 minutes).
  3. Stir in the ground turkey; cook until browned (around 7-10 minutes).
  4. Add garlic, diced tomatoes with juices, bell peppers, black beans, chili powder, cumin, salt, and pepper. Stir to combine.
  5. Pour in about 1 cup of water or broth to cover the mixture; bring to a boil then reduce heat to low. Simmer for 20-30 minutes.
  6. Taste and adjust seasoning if necessary before serving hot.
