  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 1 cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a large baking dish with nonstick cooking spray.
  2. Chop the chicken into bite-sized pieces and slice the zucchini into rounds. Halve the cherry tomatoes and slice the onion thinly.
  3. In a large bowl, combine the chicken, zucchini, tomatoes, onion, feta cheese, olive oil, oregano, garlic powder, salt, and pepper. Toss until evenly coated.
  4. Transfer the mixture to the prepared baking dish and spread it out evenly.
  5. Bake for 25-30 minutes or until the chicken is cooked through and golden brown.
