  • 4 medium Yukon Gold potatoes, thinly sliced
  • 1 medium onion, diced
  • 2 cups shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian herbs

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef and diced onion until translucent. Drain excess fat if necessary.
  3. Stir in sliced potatoes, salt, pepper, garlic powder, and Italian herbs until well-coated.
  4. In a separate bowl, whisk together the cream of mushroom soup and milk until smooth. Pour this mixture over the meat and potato blend.
  5. Layer half of the beef-potato mixture in the baking dish and top with half of the shredded cheddar cheese. Add the remaining mixture and top with the rest of the cheese.
  6. Cover with aluminum foil and bake for about 45 minutes. Remove foil in the last 15 minutes to achieve a golden-brown cheese crust.
