  • 2 lbs russet potatoes, peeled and thinly sliced
  • 2 large sweet onions (Vidalia or Walla Walla), thinly sliced
  • 1 cup heavy cream
  • 2 cups grated Gruyère cheese (divided)
  • 2 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 2 tbsp butter for caramelizing onions

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet, melt butter over medium heat; add sliced onions and cook until golden brown (20-25 minutes).
  3. In a bowl, whisk heavy cream with half the Gruyère cheese, thyme, salt, and pepper.
  4. Layer half of the potato slices in the baking dish, pour half the cream mixture over them, then repeat with remaining potatoes and cream.
  5. Top with remaining Gruyère cheese and bake covered for 45 minutes. Remove foil and bake uncovered for an additional 15-20 minutes until bubbly.
