  • 1 lb boneless, skinless chicken thighs
  • 6 fresh tomatillos, husked and rinsed
  • 4 garlic cloves, crushed
  • 1 medium yellow onion, chopped
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 can (15 oz) hominy, drained
  • 4 cups low-sodium chicken broth
  • 1 can (4 oz) diced green chiles (optional)
  • Salt and pepper to taste
  • Toppings: radishes, avocado, tortilla strips

Instructions

  1. Rinse tomatillos under water; chop onion and garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes).
  3. Add chicken thighs; cook until browned on both sides.
  4. Stir in tomatillos, garlic, green chiles (if using), and cilantro; cook for about 7 minutes until softened.
  5. Pour in chicken broth and add drained hominy; bring to a boil then lower heat to simmer for 30–40 minutes until chicken is tender.
  6. Season with lime juice, salt, and pepper. Shred chicken in the pot before serving hot with desired toppings.
