  • 1 lb flank steak
  • 2 ears fresh corn
  • 1 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp taco seasoning
  • 8 soft corn tortillas
  • ½ cup mayonnaise
  • 1 tsp chili powder
  • ½ cup crumbled Cotija cheese
  • ¼ cup sour cream

Instructions

  1. Marinate the flank steak in lime juice and taco seasoning for at least 30 minutes.
  2. Grill the corn until golden brown while the steak marinates.
  3. Heat a grill or grill pan over medium-high heat and cook the marinated steak for 5-7 minutes per side until medium-rare.
  4. In a bowl, mix mayonnaise, Cotija cheese, chili powder, and lime juice for the elote topping.
