  • 2 boneless, skinless chicken breasts (about 400g)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced (Persian or English)
  • 1/2 small red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup Kalamata olives, pitted
  • 2 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and oregano. Heat olive oil in a skillet over medium heat.
  2. Cook chicken for 6-7 minutes on each side until golden brown and fully cooked. Let rest before slicing.
  3. While the chicken cooks, chop cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  4. In a large bowl, combine chopped veggies with olives and feta. Toss gently.
  5. Drizzle olive oil and lemon juice over the salad mixture; add extra oregano if desired. Toss until evenly coated.
  6. Serve sliced chicken on top of the salad and garnish with additional feta and olives.
