Ingredients
- 12–14 lb whole turkey
- 1 cup unsalted butter (softened)
- 1/4 cup fresh rosemary (chopped)
- 1/4 cup fresh thyme (chopped)
- 1/4 cup fresh sage (chopped)
- 6 cloves garlic (minced)
- 1 onion (quartered)
- 1/2 cup sea salt (for brine)
- 1/2 cup brown sugar (for brine)
- 2 gallons cold water (for brine)
Instructions
- Brine the turkey by dissolving salt and sugar in cold water in a large pot; submerge the turkey for at least 12 hours.
- After brining, rinse the turkey under cold water and pat dry.
- Preheat the oven to 325°F. Mix butter, garlic, and herbs in a bowl; rub this mixture all over the turkey.
- Stuff the turkey with quartered onion and remaining herbs.
- Place breast-side up in a roasting pan; roast uncovered for approximately 13 minutes per pound.
- Baste every hour using pan juices until golden brown.
- Check doneness with a meat thermometer; ensure it reaches at least 165°F internally before resting for 30 minutes before carving.
