  • 1 lb lean ground beef or turkey
  • 2 cups marinara sauce
  • 2 tsp Italian seasoning
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped bell peppers (any variety)
  • 1 cup chopped onions
  • 3 large eggs
  • Fresh basil (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sprinkle sliced zucchini with salt and let sit for 15 minutes to release moisture.
  3. In a large skillet, brown the ground meat over medium heat. Drain excess fat.
  4. Add chopped bell peppers and onions; sauté until softened about 5-7 minutes.
  5. In a bowl, mix sautéed veggies with zucchini, marinara sauce, Italian seasoning, eggs, and half of the cheeses.
  6. In a greased baking dish, layer half of the mixture, followed by remaining ingredients and top with cheese.
