  • 4 tablespoons unsalted butter
  • 1 cup full-fat sour cream
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 cup grated sharp cheddar cheese (optional)
  • 2 tablespoons chopped fresh chives or green onions

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with foil.
  2. Bake whole sweet potatoes for 45-60 minutes until fork-tender.
  3. Let cool slightly, then slice each potato in half lengthwise and scoop out most flesh into a bowl.
  4. Mix the scooped potato flesh with butter, sour cream, brown sugar, cinnamon, and half the cheese until creamy but chunky.
  5. Spoon filling back into potato skins, sprinkle remaining cheese and chives on top.
  6. Bake for an additional 15-20 minutes until golden brown.
