  • 2 lbs sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 ½ cups Gruyère cheese, shredded
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper, to taste
  • ½ cup panko breadcrumbs
  • 2 tbsp butter (for greasing)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant. Add thyme and cook for another minute.
  3. In a bowl, whisk together heavy cream, sautéed garlic mixture, salt, and pepper.
  4. Layer half of the sweet potato slices in the baking dish. Pour half of the creamy mixture over them and sprinkle with half of the Gruyère cheese. Repeat layers.
  5. Top with remaining Gruyère cheese and panko breadcrumbs for crunch.
  6. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 15-20 minutes until bubbly and golden brown.
  7. Allow to rest for 10 minutes before serving.
