  • 1/2 cup pure maple syrup
  • 1 cup chopped pecans
  • 1/4 cup unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/4 cup brown sugar (light or dark)
  • 1 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into even chunks. Boil in salted water until fork-tender, about 15 minutes. Drain and mash until smooth.
  3. Stir in melted butter, maple syrup, brown sugar, cinnamon, vanilla extract, and salt. Mix well.
  4. Beat in eggs until fully combined.
