- 1 cup red lentils, rinsed
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 1/4 cup fresh cilantro or parsley, chopped

- Salt and pepper to taste
- 2 tablespoons olive oil (for sautéing)

Instructions
- Cook the lentils: In a pot, combine rinsed lentils with 3 cups of water. Bring to a boil over medium heat.
- Prepare sweet potatoes: Steam or boil diced sweet potatoes until fork-tender (about 15 minutes).
- Sauté aromatics: In a skillet over medium heat, add 2 tablespoons of olive oil. Sauté chopped onion and minced garlic until translucent.
- Combine ingredients: In a large bowl, mash cooked sweet potatoes. Add drained lentils, sautéed onions and garlic, herbs, spices, salt, and pepper. Mix well.
- Form patties: Wet hands slightly to prevent sticking; scoop about 1/4 cup of the mixture per patty and shape into discs about ½ inch thick.
- Fry patties: Heat olive oil in a skillet over medium heat. Fry each patty until golden brown on both sides (about 4-5 minutes per side).
