  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • ½ cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Peel and dice sweet potatoes into even pieces.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Sauté chopped onions and bell peppers until soft, about 5 minutes.
