  • 1.5 lbs boneless, skinless chicken thighs
  • 2 large fresh oranges (juiced and zested)
  • 4 garlic cloves (minced)
  • 3 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix orange juice, zest, minced garlic, honey, soy sauce, ginger, salt, and pepper to create the marinade.
  3. Place chicken thighs in a resealable bag or bowl; pour marinade over them and let marinate for at least 30 minutes (or overnight).
  4. Arrange marinated chicken on the prepared baking sheet and pour remaining marinade over the top.
  5. Roast in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
  6. Garnish with orange slices or fresh herbs if desired and serve hot.
