- 4 fresh salmon fillets (6 oz each)
- 2 cups fresh spinach (roughly chopped)
- 1 cup crumbled feta cheese
- 3 cloves garlic (minced)
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp fresh dill or parsley (chopped)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted, about 3-4 minutes. Remove from heat.
- In a bowl, combine the wilted spinach with feta cheese, lemon juice, salt, pepper, and herbs. Mix well.
- Place the salmon fillets skin-side down on a parchment-lined baking sheet. Carefully slice into each fillet to create pockets and stuff generously with the spinach-feta mixture.
