  • 4 fresh salmon fillets (6 oz each)
  • 2 cups fresh spinach (roughly chopped)
  • 1 cup crumbled feta cheese
  • 3 cloves garlic (minced)
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp fresh dill or parsley (chopped)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted, about 3-4 minutes. Remove from heat.
  3. In a bowl, combine the wilted spinach with feta cheese, lemon juice, salt, pepper, and herbs. Mix well.
  4. Place the salmon fillets skin-side down on a parchment-lined baking sheet. Carefully slice into each fillet to create pockets and stuff generously with the spinach-feta mixture.
  5. Drizzle olive oil over the stuffed fillets and bake for 20-25 minutes or until the salmon flakes easily with a fork.
  6. Let rest for a couple of minutes before serving.
