  • 1 medium cucumber, sliced
  • 2 medium carrots, julienned
  • 1 bell pepper (any color), thinly sliced
  • 1/4 cup fresh basil or cilantro
  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce (low-sodium)
  • 2 tbsp lime juice (freshly squeezed)
  • Water (as needed for sauce consistency)

Instructions

  1. Prepare the noodles by boiling water in a large pot. Add rice noodles and cook according to package instructions until tender but firm.
