- 3–4 boneless, skinless chicken breasts (diced)
- 8 oz spaghetti (whole wheat or regular)
- 2 cups sharp cheddar cheese (shredded)
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup bell peppers (chopped, any color)
- 1 medium onion (chopped)
- 1 tsp garlic powder
- 1 tsp red pepper flakes (adjust to taste)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and bell peppers until tender, about 5-7 minutes.
- Add diced chicken to the skillet; season with salt, pepper, garlic powder, and red pepper flakes. Cook until chicken is no longer pink.
- In a large bowl, mix the chicken mixture with cooked spaghetti and cream of mushroom soup. Stir in half of the cheddar cheese until melted.
- Pour the mixture into a greased 9×13 inch baking dish and top with remaining cheese.
- Bake for 25-30 minutes or until bubbly and golden brown on top.
