  • 2 tbsp rice vinegar
  • 1 ripe avocado, sliced
  • 1 cucumber, thinly sliced
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 2 tbsp toasted sesame seeds
  • 4 nori sheets, cut into smaller pieces
  • Salt and pepper to taste
  • 1 tbsp oil for cooking

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions.
  2. While rice cooks, heat oil in a pan over medium heat. Season shrimp with salt and pepper and sauté until pink and opaque (3-4 minutes). Set aside.
  3. In a bowl, mix warm rice with rice vinegar gently.
  4. Slice avocado and cucumber thinly.
  5. Assemble the stack: Layer nori sheets at the base, followed by rice, shrimp, avocado, cucumber, and drizzle Sriracha.
  6. Top with toasted sesame seeds and serve immediately.
