  • 8 oz andouille sausage, sliced
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (any color)
  • 2 cloves garlic, minced
  • 14 oz canned diced tomatoes (fire-roasted preferred)
  • 4 cups chicken broth
  • 1 cup okra, sliced (optional)
  • 2 tbsp Creole seasoning
  • 2 bay leaves
  • 2 green onions, chopped (for garnish)
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions, bell peppers, and celery to sauté until softened.
  2. Add sliced andouille sausage and chicken thighs; cook until browned on all sides (about 5-7 minutes).
  3. Stir in minced garlic and diced tomatoes with their juices. Add Creole seasoning and bay leaves; cook until fragrant (about 2-3 minutes).
  4. Pour in chicken broth while scraping up brown bits from the pot. Bring to a boil then reduce heat to low.
  5. Let simmer uncovered for about 30 minutes. If using okra, add halfway through cooking.
  6. In the last 5 minutes of cooking, stir in shrimp until they turn pink. Garnish with green onions and parsley before serving.
