  • 1 cup shredded cheddar cheese
  • 1 small onion (diced)
  • 2 tsp cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)
  • Sour cream or salsa (for serving)

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly before peeling.
  2. Mash the potatoes in a bowl and mix in diced onions, cumin, chili powder, salt, and pepper until well combined.
  3. Lay the flour tortilla flat and spread half of the potato mixture on one side. Sprinkle shredded cheese on top.
  4. Heat a nonstick skillet over medium heat. Fold the tortilla in half and cook for 3-4 minutes per side until golden brown and crispy.
  5. Slice into wedges and serve warm with sour cream or salsa.
