  • 1 ripe pineapple, chopped
  • 1 cup jasmine rice
  • 1/2 cup teriyaki sauce
  • 2 green onions, finely chopped
  • 1 tbsp toasted sesame seeds
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp ginger powder
  • 3 garlic cloves, minced

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, mix soy sauce, brown sugar, ginger powder, and minced garlic. Add chicken and marinate for at least 30 minutes.
  3. Rinse jasmine rice until water runs clear. Combine with a 1:1 ratio of water in a pot; bring to boil, then reduce heat to low and cover until fluffy (15-20 minutes).
  4. Heat oil in a skillet over medium-high heat; cook marinated chicken for 7-10 minutes until golden brown.
  5. Add chopped pineapple during the last few minutes of cooking until slightly caramelized.
  6. Serve jasmine rice topped with the chicken and pineapple mixture, garnished with green onions and sesame seeds.
