  • 1 inch fresh ginger, finely grated
  • 4 garlic cloves, minced
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce
  • 1 can (13.5 oz) full-fat coconut milk
  • Juice of 1 lime
  • 2 cups mixed vegetables (bell peppers and broccoli)
  • 1/4 cup chopped peanuts (for garnish)

Instructions

  1. Cut chicken into bite-sized pieces. In a bowl, combine garlic, ginger, soy sauce, and lime juice. Add the chicken and marinate for at least 30 minutes.
  2. Heat oil in a large skillet over medium-high heat. Sauté the marinated chicken until golden brown and cooked through, about 5-7 minutes.
