- 2 cups dried navy beans (soaked overnight)
- 1 medium onion (finely chopped)
- 4 slices thick-cut bacon
- 1/2 cup brown sugar
- 1/4 cup unsulfured molasses
- 1 tablespoon mustard powder
- 2 tablespoons cider vinegar
- Water (for soaking and cooking)
Instructions
- Soak the navy beans overnight in a large bowl of water.
- In a skillet over medium heat, cook the bacon until crispy. Remove and crumble the bacon, leaving the rendered fat in the pan.
- Add the chopped onion to the bacon fat and sauté until golden brown (about 5 minutes).
- In a large pot or Dutch oven, combine soaked beans (drained), sautéed onions, crumbled bacon, brown sugar, molasses, mustard powder, and cider vinegar.
- Pour in enough water to cover all ingredients by about an inch. Bring to a gentle boil before reducing heat to low. Cover and simmer for approximately 1 hour.
- Preheat your oven to 300°F (150°C). Transfer everything to an oven-safe dish if necessary and bake uncovered for about 3 hours until beans are tender and sauce thickens.
