  • 4 medium carrots, sliced
  • 2 large onions, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 cup red wine
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  5. Transfer the roast and veggies into a slow cooker; pour beef broth until just covered.
