  • 1 lb ground pork
  • 4 garlic cloves, minced
  • 1/2 cup honey
  • 1/4 cup low-sodium soy sauce
  • 1 cup long-grain rice
  • 2 cups mixed vegetables (bell peppers, broccoli)
  • 2 tbsp vegetable oil
  • 2 tbsp toasted sesame seeds

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, ground pork, minced garlic, salt, pepper, and breadcrumbs. Form into bite-sized meatballs.
  3. Heat vegetable oil in a skillet over medium heat. Brown meatballs on all sides; remove from skillet.
  4. In the same skillet, combine honey, soy sauce, and water. Simmer for about 5 minutes until thickened.
  5. Stir in uncooked rice and chopped vegetables until well mixed.
  6. Transfer mixture to a baking dish and arrange the meatballs on top. Cover with foil and bake for 30-35 minutes until rice absorbs the sauce.
  7. Let cool briefly before serving; garnish with toasted sesame seeds.
