  • 1 cup finely ground cornmeal
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 3 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/4 cup melted butter (plus extra for drizzle)
  • 1/4 cup honey

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
  3. In another bowl, beat the eggs and mix in milk and melted butter until smooth. Combine with dry ingredients; mix gently.
  4. Fill each muffin cup about ¾ full with the batter.
  5. Bake for 15-18 minutes until golden brown and a toothpick comes out clean.
  6. While baking, mix melted butter with honey for the drizzle.
  7. Drizzle warm honey butter over baked poppers before serving.
