Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a large bowl, mix rolled oats, baking powder, and cinnamon until well combined.
- In another bowl, mash bananas and then mix in almond milk and shredded carrots.
- Pour the wet mixture into the dry ingredients and stir until just combined; lumps are okay!
- Fold in walnuts or pecans if using.
- Transfer the mixture to the prepared baking dish and bake for 30-35 minutes or until golden brown.
- Allow to cool slightly before serving, optionally topping with yogurt or maple syrup.
