  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup Greek yogurt (full-fat)
  • 1 medium cucumber (finely grated)
  • 1 cup cherry tomatoes (halved)
  • 1 small red onion (thinly sliced)
  • 4 pitas (soft)
  • 1/4 cup fresh parsley (chopped)
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix olive oil, lemon juice, oregano, paprika, garlic powder, salt, and pepper. Add chicken breasts and coat evenly. Refrigerate for at least 30 minutes.
  2. Preheat a grill pan over medium-high heat. Cook marinated chicken for about 6-7 minutes on each side until fully cooked.
  3. Combine Greek yogurt with grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, chopped parsley, salt, and pepper in a bowl. Mix until smooth.
  4. Slice cooked chicken into strips or cubes. Serve on a base of rice or salad greens.
  5. Layer with cherry tomatoes, cucumbers, red onion slices, and tzatziki sauce.
  6. Sprinkle with parsley and serve with warm pita bread.
