  • 4 medium carrots, sliced
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season generously with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium heat until shimmering. Sauté minced garlic for about 30 seconds until fragrant.
  4. Add thyme and rosemary to the skillet, then place the seasoned chicken breasts in the skillet. Sear each side until golden brown, about 5 minutes per side.
  5. Remove excess fat from the skillet and add sliced carrots. Drizzle honey or maple syrup over them and toss to coat.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C) and carrots are tender.
