  • 4 cloves fresh garlic, minced

  • 1 pound bright orange carrots, peeled and cut into sticks
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix minced garlic, chopped herbs, olive oil, salt, and pepper. Coat chicken breasts evenly with the mixture and let marinate for at least 30 minutes.
  3. Heat olive oil in an ovenproof skillet over medium heat. Sauté carrot sticks for about 5-7 minutes until softened and golden.
  4. Push the carrots aside in the skillet and add the marinated chicken. Sear each side for about 3-4 minutes until golden brown.
  5. Transfer the skillet to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Drizzle fresh lemon juice over the dish before serving.
