  • 1 ribeye steak (1 lb)
  • 4 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 8 oz rigatoni pasta
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Cook rigatoni in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Season ribeye steak generously with salt and pepper. Heat a cast-iron skillet over medium-high heat and sear the steak for about 4-5 minutes on each side for medium-rare.
  3. Add butter and minced garlic during the last minute of cooking; baste the steak with melted butter. Remove from heat and let rest.
  4. In the same skillet, reduce heat to medium-low, pour in heavy cream, and scrape up browned bits from the pan.
  5. Stir in shredded mozzarella until melted, then combine cooked rigatoni with the cheese sauce.
  6. Slice rested steak against the grain and serve atop cheesy rigatoni, garnished with fresh parsley.
