  • 1/2 cup unsalted butter, melted and cooled
  • 1 cup whole milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. Mash half of the strawberries in a bowl, leaving some chunks for texture.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt.
  4. In a separate bowl, mix eggs, melted butter, milk, and vanilla until smooth.
  5. Gently fold wet ingredients into dry ingredients until just combined. Add remaining strawberries and fold lightly.
  6. Fill muffin cups two-thirds full and bake for 18-20 minutes or until golden brown. Let cool before serving.
