  • 4 cups fresh corn kernels (about 4 cobs)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons olive oil
  • Salt & pepper to taste

Instructions

  1. Shuck the corn and cut kernels off the cobs to yield about 4 cups.
  2. Dice the cherry tomatoes and cucumber into bite-sized pieces. Finely chop the red onion and cilantro.
  3. In a large mixing bowl, combine corn kernels, diced tomatoes, cucumber, red onion, and cilantro. Toss gently.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the salad mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
