- 2 cups butternut squash, peeled and cubed
- 4 oz goat cheese, crumbled
- 1 sheet puff pastry (about 14 oz)
- 2 tbsp olive oil
- 2 tsp fresh thyme or sage, chopped
- Salt and pepper to taste
- 1 egg (for egg wash)
Instructions
- 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2. Toss the cubed butternut squash in olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender.
- 3. Roll out the puff pastry on a floured surface to about 1/8 inch thick. Transfer to another baking sheet.
- 4. Once the squash cools slightly, place it in the center of the pastry, leaving a 2-inch border. Crumble goat cheese on top and sprinkle with herbs.
- 5. Fold up the edges of the pastry over the filling and brush with beaten egg.
- 6. Bake for 30-35 minutes until golden brown. Slice into wedges and serve warm.
