  • 2 cups butternut squash, peeled and cubed
  • 4 oz goat cheese, crumbled
  • 1 sheet puff pastry (about 14 oz)
  • 2 tbsp olive oil
  • 2 tsp fresh thyme or sage, chopped
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. Toss the cubed butternut squash in olive oil, salt, and pepper. Spread on the baking sheet and roast for 25-30 minutes until tender.
  3. 3. Roll out the puff pastry on a floured surface to about 1/8 inch thick. Transfer to another baking sheet.
  4. 4. Once the squash cools slightly, place it in the center of the pastry, leaving a 2-inch border. Crumble goat cheese on top and sprinkle with herbs.
  5. 5. Fold up the edges of the pastry over the filling and brush with beaten egg.
  6. 6. Bake for 30-35 minutes until golden brown. Slice into wedges and serve warm.
